Baked Plantain & Egg

Serves 2-3 people. Perfect for breakfast!





Ingredients

  • 2 ripe plantain.

  • 1 can on chopped tomato

  • 1 onion finely chopped

  • olive oil

  • 4 eggs

  • 1 tablespoon of all purpose seasoning of choice. I used Adobo Seasoning Powder.

  • Hot chilli - optional.

Cooking Method

  • Wash and wrap the ripe plantain in foil and bake in a preheated oven at 200°C for 30-40 minutes.

  • When the plantain is cooked, it will be very soft with the skin burnt black.

Meanwhile for the Sauce - 20 minutes into baking the plantain

  • Heat 2 spoons of olive oil in a pan and sauteé the onions.

  • Add the can of tomato and 1 table spoon of seasoning, I used the Adobo. I also added hot chilli powder which is optional.

  • Cook the tomato for 5 minutes and bring the heat down to simmer for another 15 minutes. We want the tomatoes to be nicely cooked but not burnt.


The Egg

  • In a ball, whisk the 4 eggs together and fry as an omelette.

  • Tip: feel free to add other ingredients to the eggs but keep it minimal. I added left over red peppers.

Finally

  • Roughly cut the omelette into small pieces and add to the tomato sauce

  • Serve with the baked plantain

  • Perfect for breakfast but can be served throughout the day.
