Serves 2-3 people. Perfect for breakfast!
2 ripe plantain.
1 can on chopped tomato
1 onion finely chopped
1 tablespoon of all purpose seasoning of choice. I used Adobo Seasoning Powder.
Hot chilli - optional.
Wash and wrap the ripe plantain in foil and bake in a preheated oven at 200°C for 30-40 minutes.
When the plantain is cooked, it will be very soft with the skin burnt black.
Meanwhile for the Sauce - 20 minutes into baking the plantain
Heat 2 spoons of olive oil in a pan and sauteé the onions.
Add the can of tomato and 1 table spoon of seasoning, I used the Adobo. I also added hot chilli powder which is optional.
Cook the tomato for 5 minutes and bring the heat down to simmer for another 15 minutes. We want the tomatoes to be nicely cooked but not burnt.
In a ball, whisk the 4 eggs together and fry as an omelette.
Tip: feel free to add other ingredients to the eggs but keep it minimal. I added left over red peppers.
Roughly cut the omelette into small pieces and add to the tomato sauce
Serve with the baked plantain
Perfect for breakfast but can be served throughout the day.
